Bread Stuffing
Jon's Mom's Recipe

Ingredients
1/2 to 3/4 cup butter
1 1/2 to 2 cups chopped onion
1 1/2 to 2 cups chopped celery, stalks and leaves
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon in total of: dried sage, thyme and/or marjoram
Poultry seasoning, to taste
1 loaf of Gonella Bread, cubed (or any large, unsliced loaf of crusty
Italian Bread)
1 c. milk

Directions
Melt butter in large heavy skillet. Add onion and celery and cook until
yellow and limp, stirring occasionally. This will cook down. When done turn
off the heat and stir the seasonings into the celery/onion mixture.

While celery and onion is cooking cut the loaf of bread into about 1" or
larger cubes. Put about 1/4 of the bread cubes into a bowl, moisten them
with milk, then gently squeeze the milk out of the cubes and put squeezed
cubes into another large bowl. Repeat with another 1/4 of the dry bread
cubes until all the bread cubes have been moistened with milk and the milk
squeezed out.

When all the bread cubes have been moistened and squeezed add them to the
cooked celery/onion/seasoning mixture. Try to separate the bread cubes a bit
as you add them. Use a fork to combine and separate the clumps of moistened
bread cubes and fluff them up a bit. Cover and refrigerate until ready to
cook the stuffing.

Cranberries
Ocean Spray cranberries are good. Prepare according to package directions.


DESSERT


Mom's Pumpkin Pie
From My Mom

Ingredients
2 pie crusts
3 c. canned pumpkin (about 24 oz)
1 c. sugar
6 eggs
1/2 c. brown sugar
1/4 tsp. salt
2 tbsp. cornstarch combined with 4 tbsp. cold milk
3 tbsp. pumpkin pie spice
2 1/2 c. warm milk
Preheat oven to 450 degrees.

Directions
Cream pumpkin well, add sugar gradually (use hand mixer), eggs one at a time, salt, spices & cornstarch with milk mixture. Lastly add warm milk slowly and bear a few seconds until smooth. Pour mixture into unbaked pie shells (you may have too much filling do not over fill) and bake in hot oven 450 degrees for first 15 min. reduce heat to 350 degrees and bake additional 40 minutes. Pie is done when center is firm not gooey.
